Iceman was still learning his abilities. He wasn't as powerful as he is in the comics, but getting there. Jean used her abilities to power the jet and save everybody which was a big decision for her. Could there have been a way for her to live? Possibly yes, but she was already transformed into her Dark Phoenix persona.
I agree with New Captain. Bobby was still learning what he can do with his powers. You can see his demonstration to Rogue at Mutant High and at the museum. As for Jean Grey, it was a matter of life or death. You see scenes where her phoenix side was beginning to come forward and the phoenix came out when she focused on trying to get the aircraft up and running, while keeping the water at bay. That amount of energy took so much that Jean blocked Kurt, so she can focus more.
What about Storm then? Surely a mutant with her amount of training could have frozen it. Also, who is Kurt?
Kurt Wagner, Nightcrawler. I do agree that Jean could have been saved but I do like it as well. Storm could try to freeze it but I don't think her powers do that. She can make snow but not just freeze water like Iceman could which he couldn't at the time. But the water was moving rapidly as well. Jean was strong enough to hold it.
Kiwi, Kurt is a mutant with a gift for teleporting. If Jean didn't block Kurt, she would still be alive.

On that note, can he teleport multiple people at a time like Azazel? If so, wouldn't that be an other way that everybody could have lived?
That I don't know. They never established this, but I think Azazel is Kurt's father and Mystique is his mother. So it would explain the blue skin, tail, and teleporting abilities. As for teleporting multiple people, that remains to be seen.
His teleporting was blocked by Jean and his teleporting abilities are limited as well, they're not as good as Azazel who doesn't need to see where he is going.
Since Jean is back now, we may never know the answer.
